First of all, the recipe that a few of you requested for the Turkey Lasagna. I had one reader suggest eggplant instead of the wheat pasta for lower carbs. I think it'd be GREAT even if one wasn't watching carbs. Hey, I'm all for lower carbs, usually- but not right now seeing as how it fuels me for my runs. *yikes*. Without further ado:
Ingredients:
***TURKEY***
1 pound ground turkey
1 large onion
1 can (14 1/2 oz. size) tomato sauce
1 can (6 oz. size) tomato paste
1 cup water
1 tablespoon sugar
1 teaspoon oregano
1 teaspoon basil
2 tablespoons parsley flakes
1 clove garlic, chopped
salt to taste ***CHEESE FILLING***
2 2/3 cups cottage cheese
4 ounces Parmesan cheese
1 tablespoon parsley flakes
1 teaspoon oregano
1 teaspoon basil
***NOODLES AND TOPPING***
8 ounces uncooked lasagna noodles
8 ounces shredded Mozzarella cheese
TURKEY: Combine turkey and onion in skillet. Brown and drain. Add the tomato sauce, water, 2 Tbsp parsley flakes, 1 tsp oregano, the tomato paste, the sugar, the clove of garlic, and salt to taste. Simmer 2-3 minutes.
FILLING: Mix cottage cheese, Parmesan cheese (grated), 1 Tbsp parsley flakes, 1 tsp oregano, and basil together in a large bowl.
Spray a 9x13-inch pan with release agent (e.g. Pam).
Add layers of turkey, filling, and noodles as follows: Half the turkey mixture, a single layer of noodles (UNCOOKED), all the cheese filling, another layer of noodles, the remaining half of the turkey mixture, and cover the top with the Mozzarella.
Bake at 350 degrees F for 1 hour, COVERED TIGHTLY with foil. Uncover, then bake an additional 15 minutes. Let stand before cutting.

I'm really hoping the sheath fits right, as it looks SO chic and classy- and I'm wondering if I made the right choice by getting the second dress in plum instead of the black and white. Black and white combo is a NO LOSE situation, ya know? Go check it out and tell me what you think. When the order comes in we'll see how they fit. Do you like LOFT as much as I do? I, of course, don't heart them as much as Anthro, but for classic pieces...They ARE my go-to source.
