New Recipe: Asian Chicken Lettuce Wraps!

Hey guys! if any of you have eaten at PF Changs, then I'm sure you've tried their chicken lettuce wrap appetizers--SO good, low in carbs and now made at home! HA! Not hard at all, and it was so delicious and light. Perfect! Here's the recipe:






ASIAN CHICKEN LETTUCE WRAPS

Ingredients

1 pound skinless, boneless chicken breasts, finely chopped
1 cup packaged matchstick carrots, cut into 1-inch pieces
1/3 to 1/2 cup Asian-style salad dressing, such as Kraft LIGHT Asian Toasted Sesame dressing, divided
1/4 cup toasted slivered almonds
1 head Boston or Bib lettuce, leaves separated

Directions

In a lightly oiled skillet over medium-high heat, stir-fry chicken and carrots until chicken is just cooked through and carrots are slightly softened. Reduce heat to low and add 1/3 cup dressing and stir well to combine, cooking for 1 minute. Transfer the chicken to a serving bowl, adding dressing, if necssary, to moisten. Sprinkle with nuts. Spoon a couple of tablespoons of chicken inside a lettuce leaf and wrap like a taco.

I added some spices to it, because I just have to have TASTE in my food and I felt it was semi-bland. But, guys, that dressing is FANTASTIC!! I love Asian style meals that are healthy as well. Best of both worlds!


Had an OK day today--was stressful coming back from a small "vaca". Pilates was the class of the day at the gym, so I decided to join. That was just OK as well. I've decided since my dog is still with my parents, and I don't have to come home for lunch to let him out (yes, I'm a good mommy!), I'm going to work it out at lunch AND after work. Gotta double time it! :-)

I feel like I should clarify a few things--a few people have asked me why I can't eat some things and why i say..."That looks so good and healthy...too bad I can't eat it." Simply put: Carbs. I'm definitely not against them. We all know you need carbs to function, folks! My trainer is to blame :-) She has me on a high protein diet so that I can build more lean muscle and burn that fat right off--it does come off quicker than a high carb diet....for ME. Every body is different, but I've always seen GREAT results eating this way. Once I get to the weight I want to be (around 150-165), I can maintain and eat "normal". Got a ways though. Besides that--I do cheat at times. :-P

SIGH. I wrote you a comment and blogger ate it! Anyway - YUM- I want to borrow this recipe! What spices did you add?! And good for you on two-a-days- I love it because i get home sooner after work - awesome!

HEY Kel! Lets see....I think I used pepper, a little chili powder and a dash of some other stuff I can't remember! LOL--I just can't stand BLANd and I NEED my spices. :) Just go crazy if you make these...I loved this recipe. Even this mix would be good in wheat tortilla's or something.......or by itself. That dressing--Im telling ya--is off the hook! HAHA!

omg that recipe looks so good. i think im gonna try it tonight! Im a bachelor fan too. i was sad to see stephanie go.. She represented alabama good i thought.

Hey, just saw your other comment. Yes, I'm 5'10 around 144-145. I'm pretty small boned but I'm trying to tone mostly and lose maybe 5 or 10 pounds. It is nice being tall, that's for sure. =)
