I must confess....

... that I had 7 Mich Ultra's, a bowl of Samoa Girl Scout Cookie Ice Cream and (organic!) olive oil and basil french fries. All of the above is NOT on my dietary list of "CAN EATS". HA!! I don't feel as bad as I thought I would, this morning. I worked hard this week, and although there were no changes when I went to weigh myself and take measurements, I'm OK with that. It's been one week since I've been back at it hard. I still have two whole months to reach my goal of dropping (on the high end) 18 pounds. :-) Today is back on the wagon with a great cardio and leg workout, a new halibut recipe and relaxation!

On e-bay (my fave!), I found DVD's from P90X being sold separately. Ones peaking my interest: Plyometrics and Abs. I bet those are both KILLER! Since I can do most all of those moves on my own, I saw no need to buy the whole set. Anyone can do exactly what he does and get the same results. It just takes hard work and a certain sequence of moves.

Breakfast yesterday was good, at least. Egg whites plus one egg mixed with sprinkling of cheddar cheese, onions and pepper. On the side, a turkey sausage link. Yes...LOVE those. A little high in sodium, but every once in awhile is OK. I was also craving some OJ! I can't usually drink it because of the sugar content, but I broke down and decided I need some.

This is a short one for today. I need to step away! from the computer screen and live real life for today! Sometimes I feel like I'm always on the internet (shopping, doing work, browsing, blogging...etc.).

Have a great Saturday!

Spicy and lemony

Had a great dinner tonight! It was pretty light and small, but I'm full--May need a light snack later, but I'll definitely make this again! I'll post the recipe later. I can't bare to sit at this computer anymore. ugh.

Spicy Lemon Shrimp

My shrimp is little and when they were broiled they shrunk even more, so next time I'll get bigger shrimp. This recipe calls for olive oil, garlic, lemon and lemon zest, salt and crushed red peppers. SO good!

Stupid, stupid word verifications!!

(What the hell? ^)

I really hate word verification -- so I just completely took it off my blog. I had several e-mails telling me they couldn't comment because of it. I also had issues commenting on others blogs today. So, now it's off forever. Please feel free to comment away.

I changed my blog a bit. I don't have time or the programs to make anything spectacular, but I figured the new header was good enough. HA! I LOVE damask print so much! There's a bedding set on ebay I want for my room. It's so chic. With pink accents? I'm in love.

NEW BEDDING FOR JENNY

So, first thing, yet another giveaway! It's for all things cupcakes, which could be potentially dangerous for me if won...BUT....I'm willing to make a few sacrifices ;-) Head over to Sweet Tea Diaries right meow!

Alright, now for today's...

The same as yesterday, but had a few different eats.

Breakfast: What is this you ask? LOL Yeah...I asked myself that too. It's an apple/peanut butter whole wheat muffin I made last week with a teaspoon of White Chocolate PB and a teaspoon of vanilla fat free yogurt. It was a nice start to the day. Didn't feel like making egg whites.

Lunch Dessert: THIS was perfect for curbing my sweet tooth this afternoon. Z-Bar chocolate brownie with a tablespoon of Girl Scout Samoa cookie ice cream....my stomach just grumbled. It was SO dang good. Tasted like a real warm brownie. I heated it in the microwave.

Here's the chicken salad I eat during the afternoon before the gym. Side note: Definitely thinking of adding some sort of small carb before my workouts. I feel sluggish nowadays...

I just sipped on a little bit of a protein shake...I ran out. Have no idea what I want for dinner :( But I know I'm starving. I have a sweet potato in the oven right now. I can't wait to smother it with Happy Cow cheese! But not tonight....carbs are for daytime. ha!!!

Workout for today: 10 minutes stairmaster, 27 minutes treadmill, 20 minutes leg work.

Octomom really does look like Angelina. Weird.

You all might as well know, I have an e-bay obsession. I mean, hell, where else can you find such good deals?? I love shopping period, but e-bay saves me (some) money. I just bought a crap load of make-up, so I'll be sure to make a vlog about it all.

Exciting news: I know exactly what I want for my first give-away for y'all! Be on the lookout. :-) Tell yo friends.

I can't think of much else for the day. All I can think of is food...food...food....foooooooood. :-)

Biggest Loser, OC Housewives reunion and Nip/Tuck tonight.

HUMP DAY is on its way!

PrettyFace's long awaited food log

Didn't Britney look her sveltest during the 2000-2001 years? Geeze. She must have busted her butt in the gym for that body. She is definitely an inspiration for me to get in that gym, I tell you. I seriously glance at this photo every week or so.

I know I've been telling you all from the get-go I'd take photos and post a log of what I eat daily - Guess what? That never happened. I am, however, happy to let you all know I took pictures today of my typical daily meals. The reason I won't be taking photos everyday is because it basically stays the same. Now, don't get too excited after viewing these enticing photos. I know you'll want to run right to your kitchen and start preparing them, but refrain. Read my blog first :) (That was a big joke, as these meals are pretty boring and not fun to make.)

My "diet" is simple. Lots of protein, low carbs. Since joining the blogging community, I've been exposed to so many wonderful and delicious recipes and I strayed from what works for my body. I'm proud to say, I've been back on track for two solid days. HA! Don't go crazy on me. Everything you all make is wonderful and HEALTHY, but my body is stubborn so I have to watch my carbs, since I want to build lean muscle, and eat lots of protein. I do plan on trying new recipes here and there, and can even keep some of my latest ones (Cashew Chicken Stew! YAY!).

So, here's the first installment of.......

Breakfast: Luna's Vanilla Almond Sunrise bar. I strayed from the usual protein shake or egg white omelet, as I was in a hurry and was craving some susitance (spelling? hehehe). I freaking love this bar!!

Mid-Morning Snack: Salmon, 1/2 cup Broccoli and 1/3 cup Brown Rice. Sure it sounds like more than a snack, but not really. By the time lunch rolls around I'm hungry again. I know it looks a little ugly, but I swear it's good! I add tons of spices.

Lunch: Tilapia, 1/2 cup broccoli and 1/3 cup brown rice (or whatever other carb I'd like. Usually sweet potatos), Sugar Free Pudding. Are you seeing the trend? Lotsa fish.

Pre-Gym Snack: 1 serving Kashi TLC Crackers and chicken salad made with fat free miracle whip or mustard. I usually get more creative, but I was pressed for time.

Post-Gym: Strawberry Parillo Protein Shake w/frozen strawberry for fun. hehe

Dinner: Leftover chicken teriyaki with carrots and Fat Free Asian Seasame Dressing. SO GOOD. For dessert? Vita Brownie, baby. They are so good, no?

HEY!! This is *NOT* on the diet for today! tee hee. I didn't eat any, but I did this weekend and my friends -- it is grood.

Workout for today: 20 minutes on stair machine, 35 on treadmill, 15 minutes of upper body work

I couldn't do any more strength work today -- I was starving! Tomorrow is another day! Thinking of busting my legs up! YAY! *LOVE* legs day!

I have a question...Have You Ever Been on a Revenge Diet? I want to think we all have? You know -- sweating your a** off because you know, in two months you'll be seeing that guy who rejected you or puffing and huffing so that bully girl in school who used to make fun of you for being "fat", can feel jealous? Well, have you?

Oooohhh look! I got it in the mail today--a steal off e-bay. I LOVE Friends, and never bought the game because I had no one to play it with. I finally just gave in to my urges and bought it. YAY!!!!!

4 more days, y'all!!!

You're a womanizer baby!!!

Good Morning!!!
I need to add something to my "Spring Wants" from my previous blog, ok? Here it is:
I LOVE this whole look. Minus the clutch. Too....grass-ish for me. LOL. Polyvore is amazing, but I hate when I click on a look I like and either A.) The dress/top is freaking $400 plus or B.) It's out of stock. :-( Makes me sad. Thanks for The Watermelon Tree for finding this gorgeous spring chic look!
So, I was out the door with my gym bag and work clothes (jeans on Friday's) at 6:50 this AM, to hit the gym for about an hour before work. For some reason I can only get up and go to the gym in the mornings on Fridays...Probably all in my head --I'm happy it's Friday, etc etc. I really should try to start going in the morning's twice a week. It'll save me an hour AFTER work when I'm sleepier. Anyway--I feel GREAT! Here's what I did today. Not much, but it's something. better than what I priginally was going to do! (Read: NOTHING!)
10 minutes stair stepper machine (yikes!)
20 minutes walk/jog on treadmill (1.57 miles)
Leg Press, quad and hamstring machines.

Wanted to do more legs, but I started talking to the fitness center director, Marsha--and she loves to talk.

I'm in the office now, chowed down on half of a Met-RX Protein Plus bar and chugged some water. I told myself no wine/beer this weekend, but Saturday I may hang out with a few girlfriends, so.........impossible. I love my wine and drinks! As long as my eating stays under control, no reason why it shouldn't now that my Aunt Flo has left, I should be OK :0)
Happy Friday (FINALLY!!!!!!!!)

Boring day my friends

I'm gonna start giving people that lusty look when I do my stretches. BAHA! NOT. Well...maybe I will. I have been known to "set a man down and set him on fire" with my eyes (yea, this was a real pick up line from an old man I received once. I've never lived it down with my friends.) Here's my own sultry look. See, I got skillz. LOL!

This blog is gonna be short and sweet. I forgot, AGAIN, to photograph my entire day'
s meals. UGH. Dummy me. Tomorrow, ladies, I promise! :)

I did have a wonderful workout and am officially out of my slump from last week. Before today I hadn't hit the gym in a week and 3 days. Eek. Way too long. I don't know why I never go when I'm in a slump. I KNOW it makes me feel better, but for some reason my brain tells me that it's much more fun to sit on the couch, drink wine and eat chocolate.

Biggest Loser and American Idol tonight...AND Housewives of Orange County and Nip/Tuck. What the Hell man. Tuesday is jam packed. They need to help a girl out and change the day for some of these shoes to Thursday nights.

Hump Day Tomorrow. I know everyone's excited. I AM! Take care y'all!

Peanut Butter (my favorite) Apple Muffins

On my day off, I've been cooking up a storm in the kitchen, whipping together Yogurt Dijon Chicken, more Cashew Butter Chicken Stew (loved that recipe), a couple salmon fillets and a couple Tilapia fillets. This is all this weeks lunches, snacks and dinners. I find that if I make everything in advance, it's less overwhelming and I can stop and breathe, watch my TV shows, etc. :-)
ALSO, I made a dessert/breakfast. Peanut Butter Ap
ple Muffins. I've been meaning to make them for awhile, and they did NOT disappoint. Check them out! Look at those chunks of apple! And the peanut butter in the center....YUM-O! ha! Now, I feel as though I didn't get to relax at all today, so that's where I'm headed now--to the couch! Watch a little Netflix. See you guys!

Ain't no hollaback giiiiiirl...

Hey guys!!

FINALLY a new blog--I had a busy, busy weekend of fun! Usually my a** sits around drinking wine, watching my Netflix (my lovah), playing with the dog, but Friday I went to the movies! Went with a BIG group of girls to see "He's Just Not That Into You." LOVE. IT. I didn't read the book, and in FACT, I was so against the book. My roommate in college loved it and thought it was the best thing since Peanut Butter. I just thought it was silly. If you don't recognize the obvious signs that a guy isn't into you...well.... let's just discuss the movie. :) So sweet. I even cried at the end. I had to stop the waterworks from overflowing too much, however, because of my new eye makeup look!

Friday Night Movie Night

I've been buying MAC eyeshadows, brushes, blushes left and right in order to try out a few new looks. My eyes are my favoritest thing to make-up on myself. I find most of my looks on YouTube. They have TONS of tutotirals! My favorite is by MakeupGeekTV. Go check her out! I got this look from Friday, from one of her videos. It turned out to be a coppery, smokey look. TA DA!

I digress...Typical. :-)

Saturday I went to the big city of Birmingham for a friend's birthday. We ate at a place named Firebird Grill. FANTASTIC. O.M.G. If you have one near you, please go eat there. I'm sure there are TONS of better places, but for pretty reasonable prices, it was GROOD. I had the butterfly shrimp. battered. Yeah, not too totally healthy (READ: AT ALL), but I was saving money for drinks later that night. LOL Once again...not that healthy, but it was a celebration, and I'm a firm believer you MUST indulge once in awhile (remind me of what I just said later, as I'll be whining in a later post about my unchanging weight loss! hehe). We then went to a bar. A bar full of smoke. And rednecks. And old people who wore black leather dresses and trenchcoat (yes. a woman donned this outfit). I always enjoy these experiences, though. It gives ya something to joke on the entire night anyway (I promise I'm not as mean as I sound).
Saturday night at the redneck bar

So, overall--fun weekend. Onward to recipe goodness! As I write, I'm chowing down on Cashew Butter Chicken Stew courtesy of my Oxygen magazine. So good and a definite "comfort food", but PACKED with protein and not bad on carbs/sodium. Check it out:

2 cups chopped red onion
1 red pepper, sliced into strips

1/2 tsp. black pepper, divided 3 cups low-sodium chicken broth
1# chicken breast, cubed
1/4 c. fresh curly parsley, chopped
1 medium Granny Smith apple, cored and cubed
1 c. frozen lima beans 1/4 tsp. kosher salt
1/4 tsp. cayenne pepper
1/2 c. cashew butter, unsalted

1.
In a large non-stick pan, saute onions, pepper and 1/4 tsp. black pepper for 4 minutes. Add broth, chicken breast and parsley. Cover and bring to a boil. Simmer until chicken is cooked through and remove from pan.

2.
Add apple, lima beans, salt, cayeene pepper and remaining black pepper to the broth. Cover and simmer for 10 minutes. Uncover and whisk in cashew butter until well blended. Return chicken to pot.

Very easy to make. I didn't take the chicken out for step 2, I just added the apple, lima beans, etc and cooked it altogether. It seems fine and the chicken isn't overcooked.

Makes 8 3/4 c. servings.

3 g. sugars

Judging from the magazine photo, it looks like it's supposed to. LOL. I'm so upset when it turns out looking NOT at all similar. And yes, I'm having wine tonight. Today SUCKED. Period. It was a last minute decision as I perused the grocery store. I even got a white wine you guys. I am a Pinot Noir (red) gal, but craved something light, airy and free. Pinot Grigio it was. :-)

Let me know if you decide to try this recipe. I thought the creamy cashew butter, spices and the green apple (YES!) were an amazing combo. Go Oxygen mag! HA! Only 4 more work days this week :-) I'm going to watch The Bachelor (if the President's press conference doesn't cut into it. Grr.) and sip on my wine. Muwah!

Brady says bye-bye, too!

New Recipe: Asian Chicken Lettuce Wraps!

Hey guys! if any of you have eaten at PF Changs, then I'm sure you've tried their chicken lettuce wrap appetizers--SO good, low in carbs and now made at home! HA! Not hard at all, and it was so delicious and light. Perfect! Here's the recipe:

ASIAN CHICKEN LETTUCE WRAPS

Ingredients

1 pound skinless, boneless chicken breasts, finely chopped
1 cup packaged matchstick carrots, cut into 1-inch pieces
1/3 to 1/2 cup Asian-style salad dressing, such as Kraft LIGHT Asian Toasted Sesame dressing, divided
1/4 cup toasted slivered almonds
1 head Boston or Bib lettuce, leaves separated

Directions

In a lightly oiled skillet over medium-high heat, stir-fry chicken and carrots until chicken is just cooked through and carrots are slightly softened. Reduce heat to low and add 1/3 cup dressing and stir well to combine, cooking for 1 minute. Transfer the chicken to a serving bowl, adding dressing, if necssary, to moisten. Sprinkle with nuts. Spoon a couple of tablespoons of chicken inside a lettuce leaf and wrap like a taco.

I added some spices to it, because I just have to have TASTE in my food and I felt it was semi-bland. But, guys, that dressing is FANTASTIC!! I love Asian style meals that are healthy as well. Best of both worlds!

Had an OK day today--was stressful coming back from a small "vaca". Pilates was the class of the day at the gym, so I decided to join. That was just OK as well. I've decided since my dog is still with my parents, and I don't have to come home for lunch to let him out (yes, I'm a good mommy!), I'm going to work it out at lunch AND after work. Gotta double time it! :-)

I feel like I should clarify a few things--a few people have asked me why I can't eat some things and why i say..."That looks so good and healthy...too bad I can't eat it." Simply put: Carbs. I'm definitely not against them. We all know you need carbs to function, folks! My trainer is to blame :-) She has me on a high protein diet so that I can build more lean muscle and burn that fat right off--it does come off quicker than a high carb diet....for ME. Every body is different, but I've always seen GREAT results eating this way. Once I get to the weight I want to be (around 150-165), I can maintain and eat "normal". Got a ways though. Besides that--I do cheat at times. :-P

Alright...Bachelor and Heroes tonight! I must be off. Hope you all have a great evening!

NEW RECIPE: Tofu and Noodles with Peanut Sauce & Inspiration

Tofu and Noodles with Peanut Sauce

Yeah.....so, decided to document the cooking of this recipe. I have to say I put WAY too much vinegar in the peanut sauce, so I had to compensate and add more of everything else. In my defense---the recipe wasn't EXACT measurements (equal parts BS. haha!) and *I* cannot work without exact measurements...at least I tried :-) And actually, this turned out pretty good!

Had to make a special trip to Target to get Unsalted Cashew Butter for another *NEW* recipe I'll be making soon (never seen the stuff before. Call me sheltered.), and I spotted these babies in a cooler! I'm not really supposed to partake in cheese because of the sodium or something, but I couldn't resist and THEY are so GOOD. I'm such the CHEESE-A-HOLIC. Perfect snack!

Anyway, here are a few pictures from the Tofu/Noodle Peanut Sauce recipe making process! I've never had Tofu! Not too bad--kinda just tastes like.....well....
nothing to me! LOL

Probably the BEST part were the stir fried veggies. OH, so good.

I'm thinking this will be my lunch for tomorrow. It's too heavy for my dinner I think--at least I'm pretty sure my trainer would scold me. LOL

Guys--I'm a MESSY cook. Are you? I mean I have sauce and tofu, etc. all over the place. I'm such the neat freak that I do clean up WHILE cooking, not at the end. Can't take it!! haha

I'm gonna let you guys know now--I plan on being bad here shortly. Well, hell, why not? I've been "bad" all week. So, I plan to watch the Superbowl with wings and beer. yes. That's right. Beer and wings. The worst combo ever for your health, but tastes so good. HA!!

Monday is a new day!

So, I look at all of these food blogs online and get jealous because of the things they make--So creative and looks so fresh and yummy! Most of these recipes, however, I can't eat, so I guess I should
n't be too jealous :-) But it's always those with the waffles or granola and bananas concoctions. Mine never look like THAT!

I need to re-take my measurements and post them here online for easy access, but guess what? I don't want to. I don't think I'm ready for the world to know those numbers. I definitely have come to realize, writing this blog, that I have body issues I need to work on.

How about Miss America 2009, Katie Stam's ROCKING bod? Now THAT is a healthy, fit body! Love it!
